SKILLET BEEF BURRITOS!
INGREDIENTS:
1 1/2 lbs GROUND CHUCK
1 pkg KNORR MEXICAN RICE
2 c. MEXICAN CHEESE
3 DICED TOMATOES
10 TORTILLAS
1 can GREEN CHILE SAUCE
1/2 c. DICED ONIONS
1/2 c. BLACK OLIVES
1 c. SOUR CREAM
SALT & PEPPER
1. BROWN GROUND CHUCK (salt & pepper) & WHEN ALMOST DONE ADD ONIONS.
2. WHILE GROUND CHUCK IS BROWNING, PREPARE MEXICAN RICE.
3. IN A LARGE BOWL MIX BROWNED GROUND CHUCK, PREPARED RICE, 2 DICED TOMATOES, 1/2 CAN GREEN CHILE SAUCE, 1/4 c BLACK OLIVES, 1/2 c. SOUR CREAM, 1 c. MEXICAN CHEESE.
4. NOW THAT YOU HAVE YOUR BURRITO MIXTURE, LAY OUT YOUR TORTILLAS, PUT A GENEROUS SPOONFUL ON THE TORTILLA, FOLD OVER, TUCK SIDES IN, THEN FINISH ROLLING UP.
5. NOW THAT YOU HAVE YOUR 10 BURRITOS STUFFED & ROLLED, PLACE JUST A BIT OF OLIVE OIL ON BOTTOM OF THE SKILLET (just enough for a thin coating) & HEAT ON MEDIUM-HIGH.
6. PLACE BURRITO IN SKILLET AND "FRY" UNTIL GOLDEN BROWN, ABOUT 4 MINUTES ON EACH SIDE.
7. AFTER REMOVING FROM SKILLET, TOP WITH A DRIZZLE OF GREEN CHILE SAUCE, SOUR CREAM, BLACK OLIVES, & DICED TOMATOES.
8. SERVE WITH A SALAD.
You can change this up several ways...
I have added corn, used red sauce instead of green, used butter instead of olive oil etc.
I love making this because we always have leftovers for lunch the next day!
