I peeled and diced red potatoes.
In my old faithful cast iron skillet I added a touch of olive oil.
Once it was heated I added the potatoes, covered and cooked on medium for 4 minutes.
Stirred then covered, cooked for another 4 minutes.
Stirred again then added diced onions, rosemary and sweet basil!
Cook uncovered 4 minutes or until soft.
These were so tasty! And the hubby was impressed I used fresh herbs!
